One Egg-cellent Meal

I’m about to share with you guys my favorite breakfast, lunch, and occasionally lazy dinner. It is probably the easiest meal I have ever shared and it’s about as kid friendly as it gets. So let’s jump on in, shall we?

So to get yourself started, you are going to need some kind of plain rice, eggs, your favorite teriyaki sauce, and a vegetable of your choosing. I usually go with mixed veggies or peas but corn is literally all we had in the house so even though it’s not as visually appealing as I would like, that’s what we’re going to go with tonight!

The first thing you are going to do is make the rice and vegetables per their instructions. As true Mallory fashion, I have picked instant rice and microwave steamable vegetables, but you pick what’s right for you!

Once that is done you will want to scramble your eggs, breaking them into pretty tiny pieces after they are fully cooked. This process helps to not overwhelm the rice with huge chunks of egg.

Now that everything is cooked you’re going to portion out what everyone wants, placing the egg on top of the rice. Then use 2-3 tablespoons of teriyaki sauce on your food and mix it all up.

We’re going to pause real quick and address the fact this recipe is super go with the flow. By that I mean, if you want a quick lunch just for yourself poof one cup of rice, a sprinkle of veggies, an egg or two and a drizzle of teriyaki sauce. Done. But maybe you want to make it for your whole family of 3… or 6…. or 12. Whoever you need to feed can be fed but you just have to eye it.

As a reference when I make this for dinner I make 4 cups of cooked rice and a dozen eggs for our family of three. I know that sounds like a lot but if you knew my husband you would understand, because he can/will somehow put away an excessive amount of food and not gain a pound. I don’t know how he does it because, me on the other hand, if I look at a piece of cake the wrong way I’ve gained five pounds, but I digress. Usually if I’m just making it for myself I use one cup of cooked rice and one to two eggs and it’s perfect.

Honestly I don’t think this recipe is hard to make at all. This would be perfect for a first time cook or an adolescent to make.

It depends on the cooking directions of your rice and veggies but since I use instant everything, this recipe maybe takes ten minutes.

Rating: 5 out of 5.

My kid loves this meal as much as I do. Also, I’ve mentioned this before but I do not add teriyaki sauce to hers just to keep her a little less sugar addicted then we are haha

If the dang star rating would let me give this a zero out of five stars I would. I would NOT recommend trying to refrigerate for later. Eggs just shouldn’t be reheated.

Ingredients

  • Rice
  • A Vegetable of your choosing
  • Your Favorite Teriyaki Sauce
  • Eggs

Directions

  • Cook your rice and vegetables according to the package instructions.
  • While that is cooking, scramble your eggs, breaking them into little pieces when fully cooked.
  • Put as much rice, vegetable, and egg into your bowl as you would like to eat.
  • Then drizzle 2-3 tablespoons of teriyaki sauce on top and mix together.
  • Serve and enjoy!
