Alright guys, you asked for it so here it is! Another recipe to trick your kids into eating more vegetables and spinach nonetheless! Okay maybe trick is kind of a harsh word but let’s ignore that and focus on the fact that your children might be eat their veggies willingly and ask for more! In my house this dish is a hit and my one year old LOVES it.
I will say I found the base of this recipe somewhere on Pintrest but since then I have experimented with some of the portions and ingredients to make the best version! When I initially found this meal I was on the Keto Diet and was looking for something that would fit into my Keto lifestyle and be super quick for me to make after a busy day. Side note, I’m not living the Keto lifestyle anymore for a few reasons but this recipe is so good I’ve kept it in our line up.
To get started you are going to need 1-1.5lbs of thinly sliced chicken breast. I prefer to get the pre sliced chicken but with the meat shortages going on right now I was just happy to get chicken breast. If you happen to not be able to find thin sliced chicken, you will just need to cut them before you get started. You’ll also need to grab 9-11 oz of bagged spinach. It depends on where I’m buying groceries as to what sized bag I get, the 2 ounces of difference won’t affect the dish in the slightest. Lastly you will need 1c. Mayo, 1/2 tsp. Black Pepper, 2 tsp. Garlic Salt, 1/2c. Parmesan Cheese, 1c. Sour Cream, and 1c. Cheddar Cheese.
Step 1: Preheat Oven to 500°. Yes, I said 500°, I know it sounds high but just trust me on this one, okay?
Step 2: Now you’re going to make the sauce by mixing the mayo, black pepper, garlic salt, parmesan, and sour cream until uniform. Then set aside for later.
Step 3: Pour the entire bag of spinach into a 9×13 pan. It’s going to fill it all the way to the top, and that’s what we want!
Step 4: Place the thinly sliced chicken breast on top of the spinach in an even fashion.
Step 5: Now take the sauce we’ve already mixed up and pour it onto the chicken and spinach. I like to make sure that there isn’t any chicken showing at all because the sauce makes a nice seal around everything causing it to cook more efficiently.
Step 6: Sprinkle the Cheddar Cheese on top and place it in the oven for 25 minutes. Again, You’ll have to trust me on this one even though it doesn’t seem long enough.
Creamy Spinach Bake
- 1-1.5lbs Chicken Breast (thinly sliced)
- 9-11 oz of Spinach
- 1 cup Mayo
- 1 cup Sour Cream
- 1/2 cup of Parmesan
- 2 teaspoons Garlic Salt
- 1/2 teaspoon Black Pepper
- 1 cup Cheddar Cheese
- Preheat Oven to 500°.
- Mix Mayo, Sour Cream, Parmesan, Black Pepper, and Garlic Salt together until one and set aside.
- Pour complete bag of Spinach into a 9×13 pan.
- Place raw Chicken on the Spinach.
- Pour the sauce mixture on top on the chicken and spinach making sure the chicken is covered completely.
- Sprinkle cheddar cheese on top and place in oven for 25 minutes.
